Mike gets crafty in the camp kitchen when he gets handed a mysterious paper bag of ingredients and a surprise recipe from the #goEast community.

Ingredients:
- Tortillas
- Shredded cheese
- Pre-cooked chicken breast
- Red bell pepper
- Sweet onion
- Tomato
- Olive oil or butter
Directions:
Prep: 5 minutes
Cook: 10 minutes
Ready in: 15 minutes
- Dice the onion, pepper, and tomato.
- Add butter or olive oil to the skillet. Add the peppers and onions and sauté until tender.
- (Optional) Drink a beer.
- Remove the vegetables from the heat and set aside. Add the pre-cooked chicken to the pan and cook until its warm. Remember to continuously move the chicken around the pan.
- Remove the chicken from the pan when cooked and set aside. Leaving a little oil in the pan, add a tortilla with the heat on very low. Spread shredded cheese across half of the tortilla. Add cooked peppers and onions, as well as tomatoes and chicken (you may need to break them apart). Fold the tortilla in half and cook until browned on one side, then flip.
- Once both sides are browned, remove from the heat, slide into thirds, and enjoy!
