Wilderness-Ready Mason Jar Gluten-Free Apple Pie Recipe

Serves: 4 to 6 – (4) 12 oz jars or (6) 8 oz jars

Apple Filling

Ingredients:

  • 1 tablespoon coconut oil or butter
  • 6 apples, peeled (optional), cored, and cubed
  • 2 tablespoons maple syrup (or sweetener of choice)
  • 1 tablespoon lemon juice
  • 2 teaspoons ground cinnamon

Directions:

  • Melt oil/butter in a skillet over medium-high heat
  • Add the apples, sweetener, and lemon juice
  • Cook until the apples have softened and the juices have been released and thickened
  • Add cinnamon and remove from heat

The Crust

Ingredients:

  • 4 tablespoons coconut oil or butter (melted)
  • 3 tablespoons maple syrup (or sweetener of choice)
  • 1 teaspoon vanilla extract
  • 1 egg
  • ½ cup almond flour (or gluten-free flour)
  • Pinch of Himalayan salt (or sea salt)

Directions:

  • Melt coconut oil/butter in a bowl
  • Add sweetener and vanilla extract—mix well
  • Mix in the egg
  • Add in the almond flour (or gluten-free flour) and salt, and mix until smooth
  • Place in the refrigerator until ready to use

Coconut Whipped Cream (Optional)

Ingredients:

  • 1 14-ounce can of full-fat coconut milk or coconut cream (chilled)
  • 1 teaspoon maple syrup or honey
  • 1 teaspoon vanilla extract

Directions:

  • Remove the thick cream from the top of the coconut milk and place it in a mixing bowl (the remainder of the can may be refrigerated and used later)
  • Use a whisk, hand mixer, or stand mixer to beat until light and fluffy (don’t forget to scrape down the sides of the bowl!)
  • Add sweetener and vanilla and continue beating until mixed
  • Cover and put in the refrigerator until ready to use

  • Preheat oven to 350°F
  • Fill each jar ½ full of the apple filling and pack down with a spoon
  • Add equal amounts of the crust mixture to each jar and smooth out
  • Put Mason jars on a cookie sheet or oven-safe tray and cook until the crust has started to bubble, rise, and brown, similar to a muffin or biscuit (about 20 minutes)
