Mike helps EMS team member Patrick take on a delicious chili lime tofu skillet with a camping twist, courtesy of Plant Based RD.
Ingredients:
This recipe serves 4-6 people, we doubled it to serve 8.
- 1 block extra firm tofu, pressed and cubed
- 3 tbsp soy sauce, divided
- 2 tsp nutritional yeast or 1 tsp of cornstarch
- 2 tbsp olive oil, divided
- ½ red onion, diced
- 1 bay leaf
- 1 bell pepper, diced
- 4-5 cloves garlic, finely minced
- 1 sweet potato, peeled and diced into 2 cm cubes
- 2 tsp ground cumin
- 2 tsp smoked paprika
- 1 tsp ground coriander
- 1 tsp oregano
- ½ tsp thyme or a few sprigs fresh thyme
- 1 cup vegetable broth
- 1, 15 oz can of black beans
- Juice and zest of 1 lime
- 1 tbsp maple syrup, optional
- Salt and pepper to taste
- optional: 1-2 cups rice (cilantro lime)

Home Prep:
- Drain and cube the tofu.
- Dice the vegetables and set aside with the beans.
- Peel and cube the sweet potatoes.
At Camp:
- Boil water for the rice and preheat the cast iron.
- Cook the rice as suggested.
- Coat the tofu with the cornstarch mixture and place it into the oiled cast iron, cook until brown, rotating regularly.
- Remove the tofu from the cast iron and replace it with onions and peppers.
- Add the bay leaves and a pinch of salt, then add the garlic.
- Stir in the sweet potato and all remaining herbs and spices. Sauté until fragrant.
- Pour in the vegetable broth, remaining soy sauce, and black beans.
- Simmer and cover with a lid to cook the sweet potato through.
- Remove the lid and gently fold in the tofu, lime zest, juice and pinch of salt and stir well to coat.
